Chef & owner Edwin Soumang - Restaurant ONE
From a tiny village near Beek via a number of European cities, a working holiday through Oceania and a luxury trip back to Limburg. Edwin Soumang’s passion for cooking has already brought many adventures, but the most beautiful adventure started 12 years ago in Roermond. Together with his partner Bethany DeLong, he runs Restaurant ONE at Roermond. The entrepreneurial couple wants to give shape to all the experiences and impressions they have gained in the past and thereby express the identity of their Michelin-starred restaurant.
From the moment you set foot in the ECI factory, you will be taken into the world of ONE. Colorful murals tell a story. The Vertical Garden from award-winning artist Claudy Jongstra gives the room a warm atmosphere; the rest of the interior is made entirely from natural and sustainable products. ONE was rebuilt in the summer of 2018 and the result is impressive.
Begin your ONE experience with a signature cocktail from Bethany or a sparkling aperitif: if the weather permits it, the drinks will be served on the lounge terrace on the Roer. After a warm welcome, Edwin takes you on a journey of discovery through the region and his own vegetable garden of 1000 m2. This garden serves as a basis for all his dishes. The cooking style of Edwin is not only “regional”, but also surprising, fresh and sustainable.
With ONE you have the opportunity to take a seat in the restaurant or at the chef’s table, in the kitchen. With an intimate group you can make use of their private dining room. Wherever you are: taste the passion, feel at home and come as you are!
