Chef & owner Luc Kusters - Bolenius
Luc Kusters is the executive chef and owner of Michelin starred restaurant Bolenius, which opened its doors at the end of 2010. In this restaurant they work with a modern and healthy cuisine using local ingredients. Their style of cooking can best be described as “New Amsterdam”.
Luc mainly cooks with modern techniques, emphasizing on vegetables and seasonal products. He gets his inspiration from all over the world and translates it into a minimalist Dutch cuisine. With his New Amsterdam cuisine, he wants to show that healthy and tasteful go well together and that the (old) Dutch flavors are surprisingly contemporary.
