Miguel is a born and bred Madrilean, but has lived all over the world. From Lyon to Berlin, Innsbruck to Wuhan in China and Pekanbaru in Sumatra. In 2004 Miguel moved to Amsterdam after meeting the Dutch love of his life! After working in the corporate world for more than 10 years, he decided to radically change his life in 2014. Having grown up in a family with a passion for food and cooking he decided to move into the restaurant world. His first job was with the Librije in Zwolle, peeling langoustines, from which he moved to Hugo’s Bar & Kitchen in Amsterdam to become their executive chef. It was there he met his future business partner, Florian, with whom he opened restaurant Pikoteo with in 2016!
