Chef & owner Sidney Schutte - Spectrum

After Sidney Schutte and Sascha Speckemeier worked together at De Librije, they both went on their own culinary dream journey: Schutte went to work in Hong Kong and Speckemeier in Shanghai. In 2015 their paths crossed again in Amsterdam. With a lot of international experience and a shared vision, they opened Librije’s Sister, which changed its name to Spectrum from January 2019 onwards.

In the years that followed, they further developed their professional growth and their own style. Typical of Schutte is his dynamic, international way of cooking. He is known for his out-of-the-box creations, which result in exciting new dishes. In his creations, Sidney reflects his roots from Zeeland, Dutch ingredients, international experience and a large arsenal of flavors.

Spectrum is located in the Waldorf Astoria. Inside, everything exudes luxury, but it is functional, without excessive frills. The service is flawless and of high quality. Just like the dishes that come from the kitchen. Sidney’s cooking style is modern and fun. He has deep classical roots, but also tons of experience from both the Librije as well as large restaurants in Hong Kong, which is clearly liberating. In recent years, Schutte developed into one of the best chefs in the country.
