For years, Merlet has been a part of the subtop of Dutch haute cuisine. A few years ago, the restaurant made an excellent move by appointing Jonathan Zandbergen as the new executive chef. His cooking style is oriented on the French cuisine combined with many local products. The interior has recently been completely redesigned and beautifully renovated. The owner Martin van Bourgogne articulated it as follows at the reopening after the renovation; “The ambitions and qualities of Jonathan are fully balanced in this new interior.”
